Fajitas

 (6 People)

3 peppers                                            2 fajita spice packets

3 onions                                              water according to spice packet

3 chicken breasts


Slice peppers, onions and chicken into small strips. Cook onions and peppers in a small amount of oil until they are soft. Remove peppers and onions into bowl. Cook chicken in small amounts of oil until meat temperature is 165 degrees with the thermometer. Add onions and peppers back into pan and add spice packets and water to pan. Cook for 3-5 minutes until sauce is well mixed. 

Serve with tortillas, cheese, sour cream, tomato, lettuce. and avocado. 

Rice

2 cups Rice                          1 tsp Salt

4 cups Water                         1/4 cup Butter

Put everything in the pan. Stick on high heat to bring to a rolling boil. As soon as it starts to boil, put on lid, and turn heat to low. Cook for 15 minutes. Let sit 3-5 minutes before serving or adding other ingredients.

Alicia's Mom's Pumpkin Bread





Ingredients:
  • Wet Phase:
    • 1 15oz can pumpkin
    • 2 eggs
    • 1/2 cup oil
    • 1/3 cup water
    • 1 cup sugar
    • 1/2 cup dark brown sugar (Will's modification uses dark brown sugar)
  • Dry Phase:
    • 1 3/4 cup flour
    • 1 teaspoon baking soda
    • 3/4 teaspoon salt
    • 3/4 teaspoon cinnamon (Will's modification increased this by 1/4)
    • 1/2 teaspoon nutmeg
    • 1/4 teaspoon cloves
    • 1/8 teaspoon ginger
  • Final Phase:
    • 3/4 cup chocolate chips (Will's modification added this)

Original Directions:
  1. Mix & Bake @ 350 degrees for 50 minutes

Will's Modified Directions:
  1. I modified the original recipe by just adding maybe an extra 1/4 tsp of cinnamon, 3/4 cup chocolate chips, and using dark brown sugar.
  2. I put all the ingredients in the left column in a bowl and whisk until combined.
  3. Separately combine all the dry ingredients (right column) and whisk together.
  4. Dump half dry into wet ingredients and hand mix until just combined.
  5. Pour the last dry into the wet and hand mix until just combined.
  6. Lastly add chocolate chips and fold in.
  7. Bake at 350 degress for 70 minutes.  The instructions say 50 min, I think it takes closer to 70 minutes (dunno if that's an altitude thing).
  8. After ~65 minutes, I just check the bread every 5 minutes by pushing a knife all the way in and if mushy bread is on the knife then it's not done
