Salsa

(Tammy's version)

Ingredients:
  • 12+ quarts tomatoes (peeled, cored, chunked)
  • 2 quarts peppers (6 green, 10 yellow, 3 jalapeno) cored, chopped
  • 3 quarts onions (cleaned, chopped) about 10 medium
  • 1 quart celery chunks
  • 1 teaspoon garlic powder
  • 2 teaspoons paprika
  • 1 cup sugar
  • 1 cup vinegar
  • 2 tablespoons coarse pepper
  • 1/2 cup salt
  • 4 teaspoons cumin

Directions:
  1. Cook vegetables until tender
  2. Add seasonings
  3. Simmer 3 hours (reduce 1/3)
  4. Bottle and process 35 to 40 minutes
  5. Use food processor to chop onions

Purchasing Recommendations:
  • 1 1/4 bushels for 2, 1 batch takes 3 pans-onions

S'mores Pie

Ingredients

Filling

  • 30 marshmallows
  • 1 cup (6oz) semi-sweet chocolate chips
  • 1/3 cup milk
  • 1 tsp instant coffee
  • 1 tsp vanilla
  • 1 cup whipping cream

Crust
  • 1 1/2 cups graham cracker crumbs
  • 2 tbsp sugar, granulated
  • 1/2 cup melted butter, unsalted

Instructions


Crust:
  1. Pre-heat oven to 325° F.  In a medium mixing bowl combine, graham cracker crumbs, sugar and melted butter.  Mix together until incorporated.  Press into bottom and up sides of a 9" pie pan.
  2. Place in pre-heated oven for about 8-10 minutes until crust is golden brown.  Allow to cool before filling.
Filling:
  1. In top of double broiler over hot water, combine marshmallows, chocolate chips, milk, coffee and vanilla.  Heat stirring occasionally; until marshmallows and chocolate are melted and blended.  Cool to room temperature.
  2. Beat whipping cream until stiff, then gently fold into chocolate filling.
  3. Pour into pie shell and freeze at least 6 hours, or until serving.
  4. Freeze any leftovers.
