Salsa
(Tammy's version)
Ingredients:
- 12+ quarts tomatoes (peeled, cored, chunked)
- 2 quarts peppers (6 green, 10 yellow, 3 jalapeno) cored, chopped
- 3 quarts onions (cleaned, chopped) about 10 medium
- 1 quart celery chunks
- 1 teaspoon garlic powder
- 2 teaspoons paprika
- 1 cup sugar
- 1 cup vinegar
- 2 tablespoons coarse pepper
- 1/2 cup salt
- 4 teaspoons cumin
Directions:
- Cook vegetables until tender
- Add seasonings
- Simmer 3 hours (reduce 1/3)
- Bottle and process 35 to 40 minutes
- Use food processor to chop onions
- 1 1/4 bushels for 2, 1 batch takes 3 pans-onions
